O consumo de água mineral tem sido associado a um estilo de vida saudável e à crença, por parte dos consumidores, de que esse produto é relativamente seguro. A RDC n. 275/05 determina os padrões microbiológicos para água mineral natural e água natural no Brasil. Este trabalho teve como objetivo comparar as técnicas de filtração em membrana e de número mais provável (NMP) pela avaliação da qualidade microbiológica de amostras de água mineral natural envasilhadas em garrafões de 20 litros, comercializadas no Município do Rio de Janeiro, Brasil. Das 31 amostras representativas (no total de 155 unidades amostrais) analisadas, 22 (70,97%) apresentaram-se insatisfatórias em virtude de ocorrência de coliformes termotolerantes em duas (6,45%) amostras, independentemente da técnica utilizada. A contagem de coliformes totais acima do limite especificado foi evidenciada em três amostras (9,68%), de enterococos em uma amostra (3,23%), de P. aeruginosa em 21 (67,74%) e de clostrídios sulfito redutores em duas amostras (6,46%). A técnica do NMP apresentou maior sensibilidade na detecção dos grupos de micro-organismos relacionados na resolução supracitada. Portanto, esta técnica demonstrou ser mais eficiente para executar o controle da qualidade microbiológica de água potável.
Abstract
Mineral water consumption has been associated with a healthy lifestyle, and many consumers believe that this is a relatively safe product. In Brazil, the RDC no. 275/05 regulates the microbiological standards for mineral and natural waters. This study aimed at comparing the membrane filtration and the most probable number (MPN) techniques for analyzing the microbiological quality of natural mineral water samples bottled into 20-liter containers, commercialized in Rio de Janeiro, Brazil. Of 31 representative samples (a total of 155 units), 22 (70.97%) were unsatisfactory. Among these noncompliant samples, fecal coliforms were detected in two (6.45%). Total coliforms count above the established limit was observed in three samples (9.68%), being enterococci in one sample (3.23%); P. aeruginosa in 21 (67.74%) and sulfite-reducing clostridia in two (6.46%). The MPN technique showed highest sensitivity for detecting the microorganisms groups specified in the above mentioned regulation. Thus, the MPN technique proved to be mostly efficient and suitable for monitoring the microbiological quality of potable waters.
