Os elementos inorgânicos são de interesse sanitário por serem essenciais para o bom funcionamento dos organismos vivos. Por outro lado, aqueles elementos considerados tóxicos, presentes em quantidades indesejadas nos alimentos como resultado da contaminação ambiental e/ou decorrente de fontes antropogênicas, devem ser monitorados a fim de garantir a saúde da população. Este estudo teve por finalidade avaliar a aplicabilidade de diferentes técnicas da espectrometria de absorção atômica na determinação de elementos inorgânicos e suas espécies químicas em matrizes de interesse sanitário. A aplicabilidade do planejamento experimental para otimização multivariada da metodologia de GF AAS para a determinação simultânea de cádmio, chumbo e arsênio em amostras de água foi avaliada. O uso desta ferramenta permitiu a implantação e validação de uma metodologia de Controle de Qualidade da água purificada utilizada nos hemocentros, proporcionando maior rapidez e eficácia para as ações de Vigilância Sanitária. A espectrometria de absorção atômica de alta resolução com fonte continua em forno de grafite e o uso de amostra direta de sólida (SS-HR-CS GF AAS) foi avaliada e otimizada para determinação simultânea de Cd e Fe em diferentes amostras. O método se mostrou sensível e preciso, com uma RSD de 3-13%, satisfatório quando se trabalha com amostragem direta de sólido. Para avaliar a exatidão do método, análises de materiais de referência certificados foram realizadas, e os resultados foram concordantes com os valores certificados em um intervalo de confiança de 95%.

The chemical contaminants are called undesirable substance, not intentionally added, but in the food with the result of environmental contamination or from anthropogenic sources. These should be monitored to ensure health of the population. For this is necessary to develop new methodologies that can help minimizing the risk to health and control and monitor the Brazilian law. This study was to evaluate the applicability of different techniques of atomic absorption spectrometry for the determination of inorganic elements in matrices of health interest. The applicability of experimental design for multivariate optimization of the methodology of GF AAS for the simultaneous determination of cadmium, lead and arsenic in water samples was study. The direct solid sampling high-resolution continuum source atomic absorption spectrometry method is proposed for simultaneous detection and quantification of cadmium and iron in different foods. The method SS-HR-CS AAS was sensitive, precise, the relative standard deviation ranged from 3–13%, which is satisfactory when working with direct solid sampling. The accuracy of the method was confirmed by the analysis of certified reference materials; the results were in agreement with the certified values at a 95% confidence interval.
