CONTRIBUIÇÃO À VIGILÂNCIA EM SAÚDE RELATIVA AO CONSUMO DE GORDURAS SATURADAS E GORDURAS TRANS POR MEIO DE AVALIAÇÃO DE RÓTULOS DE PRODUTOS INDUSTRIALIZADOS DE BATATAS FRITAS

O objetivo deste trabalho foi contribuir com a implementação da Vigilância em Saúde, na área de rotulagem nutricional, no que concerne ao consumo de gorduras saturadas e gorduras trans, por meio de avaliação de rótulos, de produtos industrializados de batatas fritas, e da legislação pertinente. Foram utilizados quarenta e cinco embalagens e os resultados de determinação de teores de gorduras saturadas e gorduras trans destes produtos; e as seguintes leis sobre rotulagem: Resoluções RDC: nº 259/2002, nº 359/2003 e nº 360/2003. Os resultados obtidos mostraram que estavam de acordo com a lei: 100,0 % dos produtos, com relação ao valor declarado da porção; 97,8 %, com relação à legibilidade das embalagens; 95,6 %, para a alegação “zero trans”; e 95,6 %, para o cálculo de obtenção do percentual de Valor Diário (VD). Com relação à conformidade, segundo a lei, de teor declarado com o teor encontrado, foram encontradas as seguintes porcentagens de amostras satisfatórias: 55,6 para a gordura saturada, e 80,0 para a gordura trans. Com relação aos teores, g por porção, encontrados de gordura saturada, 84,4; 16,0 e 6,7 % das amostras apresentaram respectivamente faixas de 2,1 a 5,3; 0,5 a 0,7, estes com declaração de 70 % menos gordura; e 1,3 a 1,8. Como o valor máximo de ingestão diária desta gordura em um lanche é de 1,1 g verificou-se que 91,1 % destas amostras apresentaram teores indesejáveis por porção. Para a gordura trans, foram encontradas 11,1; 6,7 e 17,8 % das amostras com faixas de teores, g por porção, de 2,3 a 3,5; 1,6 a 1,9 e 0,02 a 0,1, respectivamente. Em 64,4 % das amostras não foi encontrado gordura trans. Verificou-se que em 17,8 % das amostras foram encontrados valores considerados indesejáveis segundo a OMS, que recomenda uma ingestão máxima diária de 2 g. De acordo com as avaliações realizadas concluiu-se que: em geral a lei foi cumprida nos quesitos de declaração do valor, da porção e da VD; de alegação para as gorduras trans; e de legibilidade dos rótulos. Concluiu-se que: não houve veracidade, em número significativo das amostras, de declaração dos teores das gorduras objeto do estudo; e que houve, em número significativo das amostras, valores altos de teores de gordura saturada e de gordura trans por porção.

The objective of this study was to contribute to the implementation of health surveillance in the area of nutrition labeling, regarding the consumption of saturated fats and trans fats, by assessing the labels of processed products of potato chips, and relevant legislation. We used forty-five packaging and the results of determination of levels of saturated fats and trans fats in these products, and the following labeling laws: Resolution RDC nº 259/2002, nº 359/2003 and nº 360/2003. The results showed that they were in accordance with the law: 100.0% of the products, with the declared value of the portion, 97.8% with respect to the legibility of the packaging; 95.6% of the claim "zero trans" and 95.6% for the calculation to obtain the percentage of Daily Value (DV). With respect to compliance, according to law, of the declared content with the content found, were found the following percentages of samples satisfactory: 55.6 for saturated fat and 80.0 to trans fat. with respect to content, g per serving of saturated fat found, 84.4, 16.0 and 6.7% respectively of the samples had ranges from 2.1 to 5.3; 0.5 to 0.7, these with declaration of 70% less fat, and 1.3 to 1.8.
